1-medium size navel orange (cut slices into small bite size pieces)
1/2 can of organic red kidney beans
2-heaping tablespoons of Pine nuts
2-heaping tablespoons of dried cranberries
8-red leaf lettuce leaves
8-cherry tomatoes cut into halves
2 slices of Swiss cheese-cut into small pieces (I prefer Alpine lace low sodium)
In a large bowl break up the lettuce and basil leaves and mix with small amount of olive oil and white balsamic vinegar. Then lay them as a bed on two plates.
In a bowl mix all the other ingredients (except avocado) together and once again add some olive oil and white balsamic vinegar.
Divide the mixture over the two beds of lettuce.
Slice the avocado and place on top.

The term “Enzyme” was coined by Wilhelm Kuhne a German physiologist in 1877. Enzymes can be viewed as little chemical machines that enable our cells to grow and reproduce. What enzymes do is break down every particle of food we consume and use it to support every organ of the body. To put it in simple terms digestive enzymes break down food while metabolic enzymes are responsible for distribution throughout the body. A common example of this would be lactose intolerance in which a person lacks the enzyme to digest dairy products. Not making an effort to replace these enzymes can put a tremendous strain on many of our organs. How do we accomplish this? The answer lies in a third enzyme “the Food Enzyme”. Food enzymes are assimilated into the body by ingesting raw food. Digesting raw foods begins in the mouth, this creates less stress on our digestive tract but also places our existing digestive enzymes on reserve until they are needed in the future. This does not mean that we should all become “Vegan”. In many cultures raw dairy, raw fish, and raw meat are part of ethnic diets. The simplest way to incorporate raw foods in our diet would be to eat a healthy amount of fruit and salads consisting of a variety of raw vegetables as well as a variety of raw nuts and seeds. Another way is to incorporate fermented foods into our daily eating. Fermented foods have already begun their digestive process outside the body. Sauerkraut, miso, and yogurt are some more common examples of fermented foods. 1-6oz. can of wild Alaskan salmon ( I prefer Bear &Wolf brand) in water
1-7oz.can of white albacore tuna in water
1-12oz. Jar of roasted red peppers in vinegar (dice into small pieces)
4-Tablespoons of bread crumbs
2-Tablespoons of olive oil
1-Teaspoon garlic powder
-Some fresh parsley
In a large bowel mix all above ingredients together (by hand) until totally soft.
Form into patties, makes about 5
In a large skillet heat some Canola oil and heat the patties until they are slightly brown on both sides.
