What about Plantains?

    Plantains are indigenous to Southeast Asia and a main staple of many African countries. Most of us are familiar with their use in Spanish cuisine as fried platanos. But when plantains are on the green side they are perfect for thickening stews. If frying is not your thing, when they begin to ripen they are tasty grilled or roasted. When they are overripe with black spots they are wonderful in protein shakes, in pancake batter or in oatmeal. 


Protein French Toast…….

– 2 whole eggs
– 1 tablespoon of milk
– 1 tablespoon milled flax seed
– 2 tablespoons of whey protein powder
–  1 Teaspoon of cinnamon
                                                              – 3 slices whole grain bread ( I prefer Eli Brand)
– 3/4 cup blueberries
– 12 walnut halves
– canola oil
– pure maple syrup
-Step 1-Combine eggs, milk, flax seed and cinnamon in a bullet blender.
-Step 2– Heat skillet with thin layer of canola oil.
-Step 3– Cut bread into six halves, dip in mixture from blender and brown on both sides.
-Step 4– Place 3 halves on each plate-top with syrup. blueberries and 6 walnut halves.
– use cut pears if you prefer
– Use agave instead of syrup
